During the month of Ramadan, Muslims fast from sunrise to sunset, even foregoing water. Food takes on a special significance during this holy fast. Before sunrise Muslims eat suhoor, a big breakfast large enough to to get them through the day. After sunset comes iftar, or the breaking of the fast. Iftar is often a communal and festive affair. Hearty meat dishes and rich desserts are popular during Ramadan as a way to fill up before or after fasting.
