Grilled Veg Salad
Serving: 2 People Ingredients: 2 Sliced Courgettes / Zucchini 1 cup slit Baby Corn and Asparagus 1/2 cup Sliced Bell Pepper / Capsicum 1/2 cup Cottage Cheese / Paneer Strips 1/2 cup shredded Lettuce 1 Avocado ( Sliced ) Few sunflower, hemp, flax seeds/ Nuts (optional) Few herbs like Coriander, Basil, Mint For Dressing: 2 Teaspoon Olive Oil 1 Teaspoon Lemon Juice Salt Pepper Chili Flakes Method: Grill the veggies and paneer strips on a griddle from both sides until tender crisp. Mix all the ingredients f the dressing in a jar. Combine grilled veggies with nuts/seeds and herbs. Add the dressing and toss it gently. Serve fresh with optional grating of cheese. You can add or subtract any veggies as per your likings
